The Xel'Naga want to combine two species to create either perfection (their successors) or an abomination (the hybrid). It's a symbol of reproduction, which can likewise create suffering and happiness. The Protoss symbolize the male, Zerg female. "Purity" means authenticity, and the rational Protoss are "Pure in Form" because they express order, but suppress chaos (in the form of Dark Templar), while the intuitive Zerg are "Pure in Essence" because they express chaos, but suppress order (in the form of Primal Zerg).
It also symbolises the cycle of dark and light cultures interchanging throughout the ages: Roman/Celtic, Renaissance/Gothic, Baroque/Romantic, Modern/Postmodern. In the modern world this cycle has just ended, because it's become so globalised that all the different subcultures neutralise each other almost instantly.
